Lightning-fast weeknight vegetables in a savory garlic sauce

A lightning-fast weeknight stir-fry with crisp vegetables and a savory garlic butter sauce. On the table in 20 minutes, and better than takeaway.
Prep everything first
Stir-frying moves fast — have all vegetables cut, sauce mixed, and ingredients within arm's reach before you turn on the heat. Mix soy sauce, oyster sauce, sesame oil, and cornstarch slurry in a small bowl.
Sear the protein
Heat vegetable oil in a wok or large frying pan over the highest heat until smoking. Add tofu or chicken in a single layer. Don't touch for 2 minutes until golden. Toss and cook 1 more minute. Remove and set aside.
Stir-fry the vegetables
Add a little more oil to the wok. Add broccoli and pepper, toss constantly for 2 minutes. Add snap peas and cook 1 more minute — everything should be bright and slightly charred.
Add garlic and ginger
Push vegetables to the side. Add butter to the centre of the wok. Once melted, add garlic and ginger and stir-fry for 30 seconds until fragrant.
Sauce and finish
Return protein to the wok. Pour in the sauce mixture and toss everything together for 1 minute until the sauce thickens and coats everything glossily.
Serve immediately
Serve straight from the wok over steamed jasmine rice, scattered with sesame seeds.
